With the latest update build 77.0.213.1, now you can switch themes directly from the Microsoft Edge Canary. On Windows 10, a couple of months ago, this feature was already enabled in the Personalization section of the Windows Settings. However, now you are able to choose a theme independently from the Colors page in Settings.
This new build in the Canary channel allows you to have the light theme in Windows, whereas the Dark theme in Microsoft Edge. In the most recent update, the Canary channel brings a drop-down menu which will be used to overcome the color scheme of the browser.

How to allow switching theme in Edge Canary
Here is the easy method to switch theme directly from the Microsoft Edge Canary-
Step-1: At first, open the Microsoft Edge Canary.
Step-2: Click on the three dots available there at the top-right corner to expand the options menu.
Step-3: Hit the Settings item.
Step-4: On the left pane of the following screen, click on Appearance.
Step-5: Now, move to the right pane and click on the drop-down menu associated with the Theme.
Step-6: Here, you will see three different options as Light, Dark, and System.
Step-7: Select the color as per your requirement.
